We think that on these hot, sultry summer days a nice watermelon gazpacho is very tasty. The recipe below was came to us by way of our friend, Heather Hansen. She notes that it is a family favorite … without the vodka! 🙂 Carry Out Cafe doesn’t add vodka to ours either, but it still hits the spot! Enjoy

Watermelon Gazpacho

Servings: 6
You can add a shot of citron vodka to each glass if you like.

3 cups watermelon, chopped and seedless
3 cups watermelon, pureed and seedless
3/4 cup red onion, finely chopped
1 cup cucumber, finely chopped
1 tomato, finely chopped, diced
6 tablespoons fresh cilantro, finely chopped
6 tablespoons fresh chives, finely chopped
1 tablespoon jalapeno, finely chopped
1/4 cup rice vinegar
1 cup orange juice
3 tablespoons vegetable oil
1 cup water
1 1/2 tablespoons kosher salt
1/2 teaspoon black pepper, ground
1 tablespoon sugar

In a large bowl combine all the ingredients except for sugar. Taste for sweetness and add the sugar, 1/2 teaspoon
at a time, to taste.

Serve in a large chilled margarita glasses.
